Q&A with Executive Chef and CEO of “Word of Mouth Catering” David Clements!

David Clements has worked in the food industry since 1990, receiving his formal education and training at the Culinary Institute of America in New York. He established his career as an Executive Chef while working for a variety of businesses in the industry, including corporate catering, restaurants, hotel food service and cruise lines, before launching his own full-service catering company, Word of Mouth Catering, LLC. Chef, as he is affectionately known by staff and clients, is a natural in the kitchen and takes extreme pride in preparing food that looks good and tastes even better. Word of Mouth Catering provides a professional yet personal and intimate touch to a range of events of all sizes from weddings, private dinners, family reunions, corporate lunches and dinners, cocktail receptions, informal cookouts, and holiday celebrations as well as providing personal meal planning. for lunches/dinners on a weekly basis.

The company was named for the way our business has grown – through word of mouth. Clients continue to be our best advertising and source of referrals because they speak so highly of Chef and his skills. Chef developed a talent for cooking as a child via his paternal grandmother and is best known for the real love and personal touch he puts into what he does. You can taste it in the food he prepares and see it in the care the company provides to each and every event. Chef has directed and managed the creation of on-site kitchens at several large-scale events such as the Citi Open Tennis Tournament in Washington, DC. and has been the Executive Chef for hundreds of famous dignitaries and VIPs including heading up dinners for the Clintons, former President Obama and President Trump.

A few week ago Chef David catered an intimate dinner party that spoke to my soul on so many levels. From Chef David’s professional yet comfortable demeanor, high level of detail, mouth watering 4-course meal, to the conversation and music, the night was nothing short of perfection.

Our 4-course menu consisted of the following:  1stcourse- Chicken Satay & vegetable spring rolls, 2ndcourse- truffle risotto w/seared scallop drizzled in citrus butter, 3rdcourse- Cauliflower potato mash, seared beef tenderloin w/demi glaze sauce & sautéed vegetables and balsamic sauce and last but certainly not least 4thcourse- Deconstructed strawberry short cake w/raspberry gelato. The meal was absolutely DELICIOUS and equally BEAUTIFUL! Chef David thank you for a wonderful evening and thank you for sharing your story with us!

1. When did you establish Word of Mouth Catering and how did the name derive?

Word of Mouth Catering was established in 2003. My wife came up with the name and it made sense to me because that’s how I retained many of my clients…though word of mouth.

2. What type of catering services do you offer?

Word of Mouth Catering offers full service catering from staff, food preparation, event rental for weddings, private dinner parties, informal cookouts, holiday celebrations, as well as personal chef meals that can be refrigerated or frozen and consumed throughout the week.

3. What should a client expect from conception to completion when working with WOM?

I want clients to see the level of detail, professionalism, and great tasting food that I bring to each event. Each event is very important.

4. What advice would you offer aspiring caterers?

My advice for aspiring caterers is the stick with the fabric of your brand and to not be afraid to do things differently then the masses.

5. How do you balance a demanding career and family life?

I think we create and maintain all of these things through what God has given us to help us with every day life. There has to be a balance on both ends. A tremendous amount of patience, understanding and being there for one another.

6. What motivates you? My wife and kids motivate me. It is a blessing to wake up to my family every morning. I cherish every moment with them. And to witness how passionate my wife is regarding her business inspires me to want to work even harder for my family.

7. What’s your favorite quote or phrase?

Two of my favorite phrases are: “Don’t lose focus” and “Be positive.

8 .Where do you want to see your brand in five years?

I would like to see Word of Mouth Catering as a catering company to be able to hire full time employees chefs, cooks, sales team, and wait staff within 5 years.  To compete with the bigger catering companies.
